The Tomes of Villa
The Villa family has always been dedicated to the selection, care and promotion of Toma. This activity has been enjoying great success lately due to the demand for a particular product from an increasingly interested public.
Our work is divided into three very important stages: (1) buying, (2) refining and (3) selling.
1) Purchasing. The fundamental element of the purchasing phase is the deep and continuous human relationship with the producers. Our Margari (producers) are small family farms that have dedicated their lives to keeping this ancient tradition alive in the area. We face with them the problems that may arise every day, pay considerable attention to the welfare of their animals and constantly monitor the products before they can reach us.
2) Refining. This is the most important process and lasts at least 3 months. During this time, the tomes are accommodated in the aging cellar, called a vault by many, where they are washed, turned and massaged. Of each one Matteo tries to glean its character, character and merits and then highlight them by making that specific toma truly unique. The how to do it? Well, that’s a family secret.
3) The sale. After the three months have passed, the tomes that have managed to create a clear and decisive personality are ready to conquer the cutting counters of the best stores run not by just any merchants, but by enthusiasts who decide to sell not only the product, but the whole world around it.
